We’ve all been there – when we look at the clock and suddenly realize that it’s getting dang close to dinner time and nothing is even close to being ready! It happens to me more than I would like to admit… 

I pride myself on being a somewhat organized and well planned out person – but life happens and before I know it its 6 o’ clock and the kids are wondering what’s for dinner – Spaghetti has always been a fall back of mine for as long as I can remember. #1 because my kids LOVE it and #2 It is pretty easy to always have everything you need on hand. Although spaghetti is inherently easy it did produce a lot of what I really hate – dishes! There is a pot for the sauce, a pot for boiling the noodles, and then the strainer… All big clunky items that take up valuable real estate in my dishwasher sometimes forcing me to wash them by hand… Uggghh 

So when I decided to try spaghetti and “meatballs” in my beloved Instant Pot – I was hoping for the best – not necessarily for the time saved – which is awesome, but more so for the decrease in dishes that needed to be washed! Which for me is the true winner! 😉 

After a few attempts – I have perfected my Instant Pot Vegetarian Spaghetti and Meatballs to be the easiest and simplest home run dinner! Quick and Easy, 1 pot to clean, and total kid approval!

With a few pantry staples – you can have a healthy dinner on the table in no time!! All you’ll need is a jar of your favorite sauce, meatless meatballs {Gardein® are by far my favorite brand! They have a great texture and taste}, spaghetti noodles and 1/2 a chopped onion and a few cloves of garlic – chopped!

Add about a tablespoon of olive oil to your Instant Pot and hit the sautee button – dump your chopped onions and garlic into your pot

Sautee the onions and garlic until soft and translucent usually only takes a couple minutes

Then just add your meatballs and sauce over the onions after turning the sautee button off.

Here’s secret #1 that will make your Instant Pot Vegetarian Spaghetti and Meatballs turn out perfect every time! Fill sauce jar with water and add it to the pot! The excess water will help your noodles turn out perfectly every time!

Then just add your uncooked noodles to your Instant Pot – I usually use about half of a 1 pound bag.

The sauce and water should cover all your noodles and look about like this! The put the lid back on and make sure it is set to seal!   2. I go an IP about 4 months ago and am just starting to experiment with it. I love that it makes meals that usually take hours in just 30 minutes. So far soups have been on the menu but this spaghetti looks awful good too. And, as you said, what can be wrong with only having one pot to clean!

    1. Just throw them in RAW – that’s the best part!
