Rockn' Crockpot Chicken Chili

This easy ROCKN' crockpot chicken chili recipe will have your whole family coming back for seconds!

Ingredients

  • 2 Two boneless skinless chicken breasts I throw them frozen and all
  • 1 can Rotel tomatoes
  • 1 can chicken broth his gives it more of a soup consistency
  • 1 pkg frozen corn {I am a corn snob we don't do canned corn but feel free if you have a can on hand}
  • 1 can black beans rinsed -- this is the most time-consuming part
  • 1 packet of dry ranch seasoning
  • 1 packet taco seasoning
  • 1 can fire-roasted green chilis
  • 1 8 oz cream cheese
  • 1 TBS Cumen

Instructions

  1. Put the chicken in the crock pot.
  2. Top with the tomatoes, corn,
  3. the drained and rinsed beans,
  4. ranch dressing, cumin, and taco seasoning,
  5. stir to combine.

  6. Cook on low for 6-8 hours, stirring one or twice

  7. Remove the chicken breasts and shred the chicken.

  8. Place chicken back into your slow cooker with the rest of the ingredients

  9. Add cream cheese and let cook for an additional 30 minutes

  10. Serve warm and top with your favorite toppings. > See my list for suggestions
