Ingredients

  • 4 TBS Butter
  • 4 TBS Rice Flour
  • 2 Cups Milk {I used 1%}
  • 1 Tsp Ground Mustard
  • Salt and Pepper to taste
  • 3 Cups Medium Cheddar Cheese
  • 1 Box Living Now Quinoa Pasta

Instructions

  1. Boil salted water to prepare quinoa pasta according to directions on the box
  2. While pasta is boiling {will take approximately 10-15 minutes} Prepare Sauce
  3. Make roux with 4 TBS butter and 4 TBS of Rice Flour, 1 Tsp Ground Mustard, and Sat and Pepper until roux is bubbly and thickening {watch closely - it can burn quick if not careful!} Slowly add milk, slow boil for 3-5 minutes until sauce thickens - then add grated cheese. Do not use pre-grated cheese - it does not melt as well and will have a "filmy" taste to it! - let simmer unitl pasta is fully cooked
  4. Once Pasta is drained add Pasta to sauce and serve!
  5. Note - To reheat as leftover - just add a little milk and microwave!
