Cinnamon Rum Crumb Cake
Whip It Up Wednesday!!
Yesterday my friend Adrienne, over at Free Time Folics needed a cake. One that she could use to help display her lovely cake plates that she is cooking up a tutorial for. As we were talking I explained that I really really needed to go grocery shopping and that is was BAD. And with my 1 year old in full melt down mode, grocery shopping was just not in the cards. But being a HUGE fan of Food Network challenge type shows I accepted her need for cake and said game on!! I can whip up with a cake with the meager ingredients I had on hand… and I love a good challenge! So after hanging up I surveyed my options and went to work. This cake pretty much made my day!! It is the most amazing delectably cinnamon gooey cake!! Sometimes I even impress myself… 😉
Cinnamon Rum Crumb Cake
Adapted from Jill Thueson Huckstep
1 box yellow cake mix
1 1/2 cube melted butter
1 cup sour cream
4 eggs
1 tsp rum extract
1 tsp vanilla extract
Mix in mixer until smooth with no bumps
Then Mix
1 Cup Brown Sugar
1/4 Cup White Sugar
2 tsp cinnamon
1/4 tsp nutmeg
Mix and spread over cake — I take a knife and cut it through the cake
Bake at 350 for 30 minutes
Glaze
3 Cups Powdered Sugar
1 tsp Vanilla
4-6 TBS Water (until desired consistency)
Mix glaze and while cake is hot use fork and stab holes in cake to the bottom of pan, then poor glaze over the top. Use spatula gently to make sure no nooks or crannies are forgotten
Then eat up!! This cake would be perfect for Mother’s Day Brunch!
