Garlic Broccoli Salad
This savory broccoli salad is simple and easy to make. Although the ingredients may be simple, the taste is robust and full of savory goodness.
Summer is my favorite time of year, all the other seasons hold a special place in my heart as well – but summer is by far my fave! As a gal who was raised in Mesa, AZ I have come to love the heat! 100 degrees is no big thing. Point me in the direction of the nearest pool and I am good!
With the heat – finding refreshing and light salads is a MUST! Roasted veggies just don’t have the same appeal when its blazing hot outside.
I was recently at a BBQ and a friend of mine brought this garlic broccoli salad, in a lineup of mostly jello salads {I now live in Utah} I was excited to find something not made out of Jello!
I was struck by the simplicity and the incredible zesty and fresh taste – I begged my friend to share the recipe and of course, asked if I could share it with a few thousand of my closest friends online 😉
She was a sweetheart and quickly handed the recipe right over! So thanks to Toni we can all share this salad all summer long!
With a few pantry staple ingredients you can whip this up in no time! And BONUS it’s one of those kinds of salads that gets better after a day or so in the fridge!
Like any good recipe, it starts with garlic and lots of it- mince four cloves of garlic into small bits
And for the MOST time-consuming portion of today’s activity chopping up the broccoli into small bites, I used about half a large bag of broccoli from Costco – 1-2 bunches of broccoli should do the trick depending on how large a bunch you choose to purchase.
Mix together olive oil, vinegar, dijon mustard, and salt in a measuring cup until well combined. In a pinch, I have used avocado oil and balsamic vinegar with yummy results!
Then pour the mixture over the garlic and broccoli – mix so all the broccoli is well coated! Let marinate for an hour or so for best results! Like I previously mentioned this is a salad that does get better with time!
Prior to serving top with the best part fresh parmesan cheese! I love using my Microplane for grating hard cheeses like parmesan.
And that friends is how EASY this salad is to throw together! It is sure to be a BBQ favorite – even your none healthish friends will love this one 😉 – To make Vegan simply skip the cheese.
Savory Garlic Broccoli Salad
The perfect light and fresh salad for summer! Filled with zesty garlic, and seasonings to help bring boring broccoli to life!
Ingredients
- 4 cloves garlic finely minced
- 1 tsp kosher salt
- 1-2 bunches broccoli depending on the size of the bunch
- 1/3 cup extra-virgin olive oil
- 1/4 cup red wine vinegar
- 1 TBS dijon mustard
- 1/2 cup parmesan cheese
Instructions

Mince garlic, then add salt, olive oil, vinegar, and mustard to make dressing and pour over broccoli and let sit at least 2-3 hours. (this can be made the night before) add Parmesan cheese when ready to serve
This broccoli salad is, in my humble opinion is the best way to eat fresh broccoli – if we’re not counting drowning them in a pool of ranch… just saying… 😉
