Gluten Free Mac n’ Cheese

Yep you read that title right! Gluten Free Mac n’ Cheese!
I hate to admit it, but I have a big fat crush on Mac n’ Cheese… Yep there I typed it, it’s out in the open. Any one else share my love of the creamy cheesy stuff???
But with that public confession, there are some serious caveats, I will not eat boxed Mac n’ Cheese, sorry to all you blue box fans… If I am going to get together with my crush- it’s gonna be the REAL deal! REAL Cheese, REAL butter and of course some quality pasta…
So how does one who is watching their carb and gluten intake indulge in Mac n’ Cheese… for you my lovely friends, I quote the infamous words of Barney Stinson ” Challenge Accepted”
So with this quandary on the mind, I went to work to make a Gluten Free Mac n’ Cheese that was worthy of my affections…
The answer came in the form of Living NOW Quinoa Pasta! I have now made my gluten free mac n’ cheese for my family on two separate occasions and my family has been none the wiser. They had no idea that they were eating a healthier gluten free pasta! This is huge!
Let me be FRANK, I was SCARED to try it!! Really is there any gluten free options that are not going to taste like shiz… Just being honest, I have tried a couple and they just don’t even come close! But rest assured this Gluten Free Alternative has the right texture and taste DOWN!
This Gluten Free Mac N’ Cheese is SUPER easy to make and can be made stove top in less than 30 minutes! You could add some veggies or some chicken, or sausage to round it out a bit! But my family loves it as is!
Gluten Free Mac n' Cheese
Ingredients
- 4 TBS Butter
- 4 TBS Rice Flour
- 2 Cups Milk {I used 1%}
- 1 Tsp Ground Mustard
- Salt and Pepper to taste
- 3 Cups Medium Cheddar Cheese
- 1 Box Living Now Quinoa Pasta
Instructions

Boil salted water to prepare quinoa pasta according to directions on the box

While pasta is boiling {will take approximately 10-15 minutes} Prepare Sauce

Make roux with 4 TBS butter and 4 TBS of Rice Flour, 1 Tsp Ground Mustard, and Sat and Pepper until roux is bubbly and thickening {watch closely - it can burn quick if not careful!} Slowly add milk, slow boil for 3-5 minutes until sauce thickens - then add grated cheese. Do not use pre-grated cheese - it does not melt as well and will have a "filmy" taste to it! - let simmer unitl pasta is fully cooked

Once Pasta is drained add Pasta to sauce and serve!

Note - To reheat as leftover - just add a little milk and microwave!
