Sweet and Tangy Chipotle Mayo

When it comes to burgers I use to be a classic kind of girl. I stuck with the standard lettuce, tomato, ketchup, mustard and some cheese {obviously}. 

But after living in Vegas and stepping out of my comfort zone and trying burgers with all kinds of different and unique flavor combos I almost struggle now to have a bland “classic” burger when you can get so creative and have some serious fun with your burgers!

One of my favorite flavor combos I have tried to date was at Bobby Flay’s burger joint “Bobby’s Place” on the strip – his southwestern burger with green chilis, chipotle mayo, and pepper jack was one of the most delicious burgers I have ever had. I still dream about!

But anywho back to the task at hand sharing this amazing concoction I dreamt up after moving from Las Vegas. Not to toot my own horn but this comes pretty dang close to Bobby’s rendition and it is a heck of a lot easier to make I am sure! This recipe is so easy I can throw it together and have it for lunch!

Green Chile Veggie Burger With Chipolte Mayo

This Green Chili Veggie Burger With Chipotle Mayo will rock your world! It has just the right amount of sweetness and spice!

Ingredients

  • 1 Black Bean Burger
  • 1 TBS Chopped Green Chili
  • 1 Slice Pepper Jack
  • 1 Whole Wheat Thin Bun

Chipotle Mayo

  • 1/4 Cup Mayo
  • 1/2 Lime Juice from half a lime
  • 1 Tsp Chipotle Seasoning
  • 1-2 Shakes Hot Sauce
  • 1 Tsp Honey or Agave

Instructions

  1. Grill or Pan Fry Burger according to package directions top with grilled green chilis, cheese and don't skip the chipotle mayo!! 

 To whip these burgers up, but more importantly, the chipotle mayo lets get started! 

These are some of the brands I used to create my mayo but feel free to use your favorites!

Combine your mayo, seasonings, and hot sauce in a bowl – I like to use bowls that have lids so when I am done I can just cover it up and place it in the fridge. To make sure you get the most juice from your lime roll it a couple times on your counter with the palm of your hand! I learned this once in a cooking class and have used the trick ever since – it works great! I also love using a lemon squeezer when working with fresh citrus juice it makes the job way easier and cleaner! 

The star of this mayo is the touch of honey! It gives the mayo just the right kick of sweet to balance the spice!

Then mix it all up well with a spatula to make sure all is incorporated!

Really this flavor combo works with any burger – during the week when things are hectic and I need a quick meal I like to use Morningstar Spicy Black Bean Burgers for my base they pair really well with this flavor combo and they are a bit healthier than a burger so I can eat them more frequently! 😉 Or you could try these made from scratch Cilantro Lime Black Bean Burgers from Lemon + Zest. 

Top your burger of choice with green chilis – I like to use the fire roasted mild ones – but feel free to go hotter if that’s what you’re into! 

I also like to use thin buns – I opt for a whole grain or whole wheat variety with added fiber! No sense wasting your calories on a big buttery bun! Top with some pepper jack cheese and slather that sweet and tangy chipotle mayo all over your bun! It is so flipping good you may want to dip your burger right into the bowl totally disregarding any “double dipping” rules!

This mayo also works great when paired with 

  • Sweet Potato Fries 
  • Sandwiches 
  • Eggs 
  • Fries 
  • Wraps
