Heavenly Healthy No Bake Cookie Bars, SO Dang Good!

One of my favorite desserts to make is no-bake cookies. They are super easy to make, and secondly, they are a one pot creation, and no oven is needed. All big wins in my book.

I am a moderation in all things kind of gal, where no foods really are off-limits. I focus on eating whole nurturing foods with keeping a space for foods that are just fun!

When I want a sweet treat and something full of good for me stuff, these are my go-to! I get the fun of no-bake cookies, with the nutrition and nutrients my body needs.

So yes, these healthy no-bake cookie bars are one of my single most favorite things to eat! They are so simple, but yet pretty much the best thing EVER.
Even if you are not on the “clean” eating, sugar-free train or even care if your desserts are guilt-free or not… you will still FLIP over how good these Healthy No Bake Cookie Bars are! No joke, they are the BEST healthy eating treat I have come across to date (and that’s saying a lot). Besides being insanely good, they are SUPER EASY to Make! That, my friend, is a WIN!!! These Heavenly Healthy No Bake Cookie Bars will rock your world and help you impress all of your friends!

And don’t let the craisens scare you. They add so much flavor you will not be mad at them!

These are SOOO Velvety and smooth you would have no idea they were healthy unless you were told!!

Heavenly + Healthy No Bake Cookie Bars

These bars Healthy No Bake Cookie Bars are sooo velvety and smooth you would have NO clue that they are healthy! Bonus they are done in 15 min!

Ingredients

  • 1 Cup All Natural Peanut Butter I have used Almond Butter with success!
  • 2/3 C Honey
  • 1/2 C Coconut Oil
  • 2 Cups Old Fashioned Rolled Oats
  • 1 C Dark Chocolate Chips - You can substitute 1/2 C Unprocessed Cocoa Powder - For less calories - bars will be dryer!
  • 3/4 C Craisens totally optional! - I LOVE them! But I know they're not for everyone

Instructions

  1. Melt PB, Honey, and Coconut oil until melted and delightful in a heavy saucepan – remove from heat and add remaining ingredients – poor into a lightly greased 9×13 pan. The HARDEST part waiting 2-3 hours for the bars to set up!

These are a cinch to throw together. The trickiest part is waiting for these dang heavenly no-bake cookie bars to set… It does take a while 🙁

But once they are set, dig in and enjoy! These are best when you keep them refrigerated and COLD! Warning these are highly addictive, so you will need to be in your portion control game, sugar-free or not!

  3. i am dying for these to hurry and set up, so I can eat one! I made them to take with us this weekend. We will be traveling for a basketball tournament and they seemed like a kid friendly”energy bar” for inbetween games. I added 2 Tbsp ground flax and 1/2 C roasted almonds in place of the craisins. Thanks for the recipe.

  5. These turned out great. I too added chopped almonds for a little extra crunch. I also always use Parchment Paper instead of greasing pans. Every little bit helps!

    These were really yummy, thank you! I made them with the cocoa and they were still very moist. I found them slightly too sweet so next time I will not use the craisins and will use less honey, to taste.
