Simple Hash Brown Potato Soup, Everyone Will Love!

Although spring is supposedly right around the corner, here in the great state of Utah, we are in the middle of a whiteout, even as I type. I am DONE with the cold weather. Mother nature did not get the memo that it is MARCH.
Although the weather outside is frightful, this recipe is a home run, regardless of the season. It is one of our family’s favorite soups and one I lean on for a quick, easy dinner with minimal effort. Thank goodness for my slow cooker! You could easily convert this to an instant pot recipe and have it ready quickly. (about 25-30 minutes)
This lazy day hash brown potato soup is so simple to throw together, and with a little bit of effort, you have a pretty hearty and filling dish to feed your crowd. You can serve it in a big bowl, or a bread bowl would be an amazing addition!
All you will need is fresh or frozen hash browns, and cubed ham (leftover ham works great! I still had some leftover ham in my freezer from Christmas, and it was so good in this soup! So this is a great soup for repurposing leftover ham!), chicken broth or chicken stock, cream of chicken soup, onion, cream cheese, and a dry ranch seasoning. That is all you will need for this amazing loaded potato soup.
If you like a heartier potato chunk in your soup, this also tastes amazing with cubed potato hash.
Over the years, as I have developed my cooking skills and have started to shy away from canned soups and items filled with excess preservatives and ingredients I cannot pronounce, I have found some great “from scratch” alternatives you can easily opt out of!

Lazy Days Hash Brown Potato Soup The perfect easy soup for those busy weeknights!
Ingredients
- 1 package of fresh or frozen shredded hash browns
- 1 small onion diced
- 1 lb cubed ham leftover ham
- 2 cans Low Sodium Chicken Broth
- 1 can Cream of Chicken Soup
- 8 oz Cream Cheese cubed cream cheese (for easier melting)
- 1 packet Ranch Dressing Seasonings this will provide a lot of flavor!
- Salt & Pepper To Taste
Instructions

Combine all ingredients into your crock pot except the cubed cream cheese. Let cook on low all day or on High for 3 hours – add cream cheese for the last 30 minutes.

Top with shredded sharp cheddar cheese, a dollop of sour cream, bacon bits, and sliced green onions – So GOOD!

Shredded cheese (cheddar, gouda, and pepper jack work great), bacon crumbles, green peppers, a dash of hot sauce, and fresh herbs (Rosemary, oregano, marjoram, basil, lovage, and bay to add nutrition, flavor, and depth)
You could easily omit this ham, sub the chicken broth for vegetable broth, and use a cream of mushroom soup instead to make this a vegetarian-friendly comforting soup.
