Super Easy Pita Style Mexican Pizza

Midweek meals can be chaotic! This pita style Mexican pizza is a breeze to put together and a great way to get your kids to eat some veggies!

Weeknight meal time can utter chaos! With kids running in every direction and homework struggles { a whole other tangent} – you may find yourself seeking out the nearest drive-thru… I GET IT!! 

It is super easy to not have the energy to get a nice healthy well-balanced meal on the table.

That’s why I decided to start sharing SUPER simple meal ideas that can be made in a SNAP, require few ingredients AND in some cases – your kiddos can do all the work! #winning – I have found my kids actually like pitching in and helping to get dinner ready!

This pita style Mexican Pizza recipe came to be out of a night when few ingredients were on hand, so my “chopped” style dinner has since become a FAN favorite and my kids love being able to create their own pizza just the way they like it! 

These pizzas are a BREEZE to put together and can be totally customized by what you have on hand and what your family will actually eat. 

Start by chopping up and preparing some “ingredients” for your kiddos to choose from – some of our favorites are baby bell peppers, tomatoes, olives, corn, and of course cheese. You could even add some ground turkey or beef taco meat. 

Start by spreading a thin layer of refried beans onto a whole wheat pita, then top with your favorite ingredients – this gives your kids a chance to pick and choose and make their pizza 100% original. I like to use my homemade refried beans – {don’t freak out!! They are a cinch to make in an instant pot and then freeze to have on hand whenever!} I promise if I can handle them you can too! Otherwise just buy a can or two! 

Then that’s it!! Bake them in the oven at 400 degrees for 10 minutes and dinner is DONE!! They really are that easy!! 

We like to top ours with some Cholula hot sauce, avocados, fresh lettuce, sour cream, and cilantro!

Ingredients

  • 1 Whole Wheat Pita
  • 1/4 Cup Refried Beans Add to taste
  • 1/4 Cup Cheese Add to taste
  • 1/4 Cup Tomatoes Add to taste
  • 1/4 Cup Peppers Add to taste
  • 1/4 Cup Corn Add To taste

Instructions

  1. Spread beans onto pita 


  2. Top with desired toppings 

  3. Bake @400 degrees for 10 minutes 

  4. Garnish with fresh lettuce, avocados, hot sauce, and sour cream
