Ole Broccomole
Whip It Up Wednesday!
I was intrigued when I saw a recipe for “Broccomole” on Pinterest. Could it be? My favorite mexican side dish could be made with Broccoli?!? I was skeptical to say the least. I had to try it! I whipped up a batch and made a few tweaks here and there. After whipping it up I presented the dip to my hubs for review, the conversation went something like this.
Me: Try This
Kelly: What is It?
Me: Just Try It
Kelly: Um ok…
Kelly: This is good what is it?
Me: It’s Broccomole
Kelly: Brocowhat?!? ….Shut the front door… This has Broccoli in it!
Me: Um yeah, hence the name Broccomole!
Needless to say he and I both have jumped on the broccomole bandwagon! It is really good, like way better than I thought it would be! I even had to buy more healthy chips to go with it!
Ole Broccomole
Adapted From: Domestic Fits
3 Cups Broccoli
3 green onions chopped finely
1 jalapeno seeded and diced
1 tsp olive oil
2 oz 1/3 less fat cream cheese
1 TBS low fat sour cream
1/4 tsp chili powder
1 TBS fresh cilantro
1/4 tsp kosher salt
1/4 tsp cumin
1/2 lime squeezed for juice
1 clove of garlic minced
Steam broccoli until soft – do not over cook! Just to the point where it is bright green in color and tender. Drain Thoroughly
Put drained broccoli and other ingredients in food processor and blend until desired consistency!
That’s it Easy!! — You can serve warm or chilled – We served it with baked tortilla chips

Just steam broccoli until it is pretty and tender!
Then throw it in your food processor and you’re done!!
So Yummy!! We gobbled it right up!!
