Tropical Dreaming Protein Packed Milkshake

· · · ·

This tropical protein packed milkshake is filled with yummy beachy goodness with pineapple, coconut, and lime!

I was on Facebook the other day scrolling through my feed, which as of now has become a constant flow of my friends and their awesome and exciting vacation pictures intermingled between the eerily creepy targeted ads.

Photos with my friends clad in sunglasses, with smiling faces, on beaches or drinking poolside, made me wish my summer included more exciting vacation plans then visiting family in Idaho. {Which is great, don’t get me wrong!} But man oh man, a vacation next to the beach would be ahhhmazing! This girl could definitely use some Vitamin Sea!

I truly am happy for my friends and I am excited for them, but it is hard not feel a teensy bit jealous. Am I alone on this one?!

So being a girl who makes the most of any given situation I decided I was going to whip up a tropically inspired concoction of my very own.

I may not be drinking it poolside or on a beach, but I definitely have been enjoying these tropical dreaming protein packed milkshakes – as have my husband and kiddos.

It has all the best beachy flavors… pineapple, toasted coconut, and let’s not forget the lime. I also added a new secret ingredient and my new favorite discovery- Swell, The Next Wave of Ice Cream! It has the most protein per pint than any other protein ice cream on the market and the simplest list of REAL ingredients. So a healthy ice cream that tastes great and is better for you! A total win in my book.

For the recipe at hand, I used their coconut flavor but Swell ice cream comes in a bunch of awesome flavors including Chocolate Chip Cookie Batter, Cookies ‘N Cream, Dark Chocolate Toffee, Mint Chip, Salted Caramel Crunch, Peanut Butter Chocolate Chip, Vanilla Bean, Dutch Chocolate, and Mocha. I have not worked my way through all the flavors but the ones I have tried did not disappoint!

So back to making this yummy summer shake – because summer and milkshakes are the perfect pair.

Step one is to toast your coconut. I love the way toasting coconut helps bring out the flavor even more!

In a non-stick pan heat the coconut and cook until lightly brown. Remove from heat quickly – it can go from perfect to burnt super fast! I used an organic unsweetened coconut to keep with the healthier theme.

Next comes the best part – the Swell ice cream! It is best to let it sit for a minute or two to soften so it is easier to remove from the carton.

Add 1 Cup Frozen Pineapple

Add about 1/2 Cup Almond milk, and the toasted coconut.

And let us not forget the lime which is my favorite! Lime+Coconut +Pineapple = perfection.

Then blend it all up and Enjoy!! The recipe makes enough for two good sized shakes.

This is a super simple one, a breeze to whip up and sip on while you’re enjoying all your friends’ vacation photos.
