Decadent Low Carb Avocado Toast

The stuff is EVERYWHERE!

It is blowing up my Instagram, Facebook, and Pinterest feed with gorgeous shots of perfectly styled avocados and bread perfectly paired and topped with all kinds of delicious fare. It’s enough to make this grown woman cry, okay, okay so maybe not legit tears more like drool… lol.

But as I get older and I am dealing with my PCOS {Polycystic Ovarian Syndrome} diagnosis, carbs and I are not nearly as tight as we use to be. I feel much better when I cut back and focus on eating healthy proteins, fats, and moderate to low carbs.

So all that delicious bread and avocado makes my heart hurt. I miss you BREAD!

I have been focusing more and more on eating right and not eating less. By focusing on all the RIGHT foods for my body and indulging in those, I don’t feel like I am depriving myself at all. So here is the good news, scratch that, the GREAT news!

There are so many ways to indulge in your favorite foods and still maintain a low carb lifestyle. And Avocado toast is now back on the table! New and Improved improved and low-carb friendly! , With with a little help from my friends at Atkins.

This avocado toast is perfect for breakfast, brunch, lunch, or a great snack, and is pretty easy to throw together!

To start making this delicious and decadent toast combine your eggs, olive oil and water in a small bowl – whisk until well combined and set aside

Mix together all your dry ingredients in large bowl – Add your wet ingredients and mix until a sticky dough forms

Press dough into a prepared  8×16 pan and bake at 375 for 20-25 minutes

While toast is cooling – get to mashing!

Ingredients

  • 1 egg
  • 1 TBS olive oil
  • 1/4 Cup water
  • 1/2 Cup grated Parmesan cheese
  • 1/2 tsp baking powder
  • 1/2 tsp stevia
  • 3/4 tsp fresh oregano I used 1 tsp dry oregano
  • 1/4 tsp crushed red pepper
  • 4 ripe Haas avocados
  • 4 TBS fresh lemon juice
  • 1 tsp seasoning salt I used garlic salt
  • 1 1/2 Cup Almond Flour

Instructions

  1. Preheat oven to 375

  2. Whisk together eggs, olive oil, and water in a small bowl set aside 

  3. In a large bowl combine almond flour, Parmesan cheese, baking powder, stevia, oregano, and red pepper flakes, and stir to blend. 

  4. Add wet ingredients to the dry ingredients, stirring to form sticky dogh 

  5. Coat a half sheet pan with olive oil spray, Smooth the dough into an 8x16 rectangle. Bake 20-25 minutes, until golden and crispy around the edges. Allow toast to cool, about 20 minutes 

  6. While dough is cooling, prepare the avocados: Place the avocados in a large bowl with the lemon juice and seasoning salt, and mash well. Cut the toast into eight squares and top with avocado. Serve immediately!

Now comes the best part, enjoying this delicious avocado toast! The low carb version of this recipe was a hit in my household -– It was even husband, and teenager approved! To make it more of a meal you could easily top it with a poached or sunny side up egg!

  2. Hello, thank you for this recipe. Could I kindly ask how much almond flour to use? Don’t know why I can’t find it in the ingredients’ section

    1. So weird it’s 1 1/2 Cups!
