A couple weekends ago we had a house full of guests. We shipped our kiddos off to the grandparents for the weekend, while our friends flew in from Chicago and a couple “couples” friends from town all crammed into our home in Utah. It was six couples under one roof and we had a RIOT!

The house was full and it felt so good to entertain and to have friends over! We stayed up late playing games, laughed, talked and we ATE, a lot. 

My dear friend, Renee’s husband is a classically trained chef and was an apprentice to the Rick Bayless of Frontera Grill fame. So the man can cook! 

I was more than willing to hand over the reigns of my kitchen to his very capable hands. 

Seriously – the food was so good, almost as good as the company. 

One of the things that he made that I am still craving like crazy is his hummus. I am very fickle when it comes to hummus, I’ll have it at some places and I can’t get enough and at other establishments or some store bought brands I can’t stand. Hummus is very hit or miss for me and Erik’s was the best hummus I have ever had! 

Don’t worry I will be sharing the recipe shortly – but I did have to beg and barter to get it! 

In the meantime grab your favorite store bought brand of hummus and enjoy this tantalizing {trying to use new words besides delicious} greek style pita pizza – they are the perfect throw together dinner your family will love!

To make the crust grab a bag of your favorite whole wheat pitas and use a little high-quality EVOO to smooth over the “crust” I also added a little salt and pepper. You can use a spoon or a pastry brush to smooth the oil onto the pita – then heat them in the oven at 425 for 8-10 minutes.

While your pizza crusts are baking cut up some of your favorite greek toppings – I love kalamata olives, cucumbers, grape tomatoes, and red onions and don’t forget the feta! Grilled chicken is also a nice touch if you are wanted to add a bit more protein.

Once the pizza crusts are done pull them out of the oven and load them up with the goods! Start with a generous smear of hummus {Erik’s recipe – coming soon!} then top with olives, cucumbers, tomatoes, red onions and feta cheese.

Ladies and gents it does not get any easier than that!! This Greek-style pita pizza is full of flavor and is the perfect lighter fare for summer – It makes a great meal or even a fun party appetizer!

Greek Style Pita Pizza

With all your favorite savory Greek flavors this quick and easy greek style pita pizza will not disappoint! It is the perfect throw together dinner!

Ingredients

  • 1 Whole Wheat Pita
  • 1-2 TBS Hummus To Taste
  • 1 TBS Kalamata Olives To Taste
  • 2-3 TBS Diced Cucumber To Taste
  • 2-3 TBS Garpe Tomatoes To Taste
  • 1-2 TBS Feta To Taste
  • 1-2 TBS Red Onion To Taste
  • 1 TBS Olive Oil

Instructions

  1. Spread a thin layer of a good quality olive oil over pita and bake for 8-10 minutes at 425 

  2. Spread hummus over warm (not hot) pita bread and top with toppings as desired 

  3. We even love drizzling it with a little balsamic vinegar! 

We love a good Pita Pizza at our house and have them on rotation all the time!

    This was so delicious and perfect for our lunch today! My hubby and son absolutely loved this! So filling and great for an easy meal!
