How To Make Low Carb Egg Casserole

Making this egg casserole is a total breeze and most ingredients you’ll already have on hand. Egg, butter, cheese, baking powder, cottage cheese, salt and pepper, and flour. If the cottage cheese freaks you out a bit – it adds a protein punch and a great texture to the finished product!

I recommend grating your own cheese and not buying bagged pre-shredded cheese. When you shred your own cheese, you get a better melt and fewer additives.

Don’t be afraid to get creative – I like to think of its a blank omelet base, so many delicious ways to go with this!

It keeps in the fridge ok for 5 days – so you could make it at the beginning of the week and easily eat on it all week long. Which I have done!

If you want to cut some calories, opt for half egg whites/half-full eggs and go with low-fat variations of cottage cheese and cheddar cheese.
