Sometimes you just want a dang cookie, even when trying to eat healthier. I firmly believe there is a space for tasty goodness and a healthier option. These Paleo chocolate chip cookies thread that needle perfectly. This paleo chocolate chip cookie recipe is delicious and a great grain-free option. It has become one of our favorite recipes. And for my fellow Keto and low carb friend, these cookies are not only Paleo but also make a couple of simple adjustments to make them Keto friendly.

We love this great recipe. It creates the most decadent and delicious Paleo Chocolate Chip Cookies Ever! I know what you’re thinking; how in the world can one claim such a thing, the blasphemy. Well, it’s my blog, so I am free to express my very biased opinions.

I did take them to a blogger meet-up with some friends where I was pawning off these perfect paleo chocolate chip cookies to anyone willing to try them. I am to report that the feedback was overwhelmingly positive, and most of them were shocked when I told them they were considered healthy. I must add that these were not health and wellness bloggers; most of the bloggers were foodies. These cookies are the real deal.

These delicious paleo chocolate chip cookies are light and melt in your mouth. Some other healthy chocolate chip cookie recipes I whipped up tasted good, but the texture was weird. Or they just weren’t good. I don’t want to eat Paleo desserts just because it’s Paleo or healthy. I want it to taste LIKE a dessert! What’s the point if it doesn’t taste a little sinful!

Paleo Chocolate Chip Cookies

Sometimes you just want a dang cookie!! This recipe creates the most decadent and delicious Paleo Chocolate Chip Cookies Ever

Ingredients

  • 3 1/4 cup bob’s red mill Almond Flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 TBS Coconut Flour
  • 1 TBS Cornstarch or Arrowroot
  • 2 eggs {room temperature} or 2 flax egg if making Vegan
  • 1 tsp high-quality vanilla extract
  • 1/2 Cup NOW ® Grade B Organic Maple Syrup or if making Keto use all-natural sweetener
  • 1/2 Cup coconut oil melted or grass-fed butter works well too.
  • 1 1/2 Cup Dark Chocolate Chips the darker the better

Instructions

  1. Preheat oven to 375 degrees f- line a large baking sheet with parchment paper
  2. Combine dry ingredients in a large bowl and set aside
  3. In a separate bowl, combine wet ingredients eggs, vanilla, coconut oil, and maple syrup
  4. Combine wet and dry ingredients, then add dark chocolate chips.
  5. Spoon onto the prepared cookie sheet with a cookie scoop and bake for 8-10 minutes!

A couple of recipe notes:

  • Stick with the listed grain-free flours; they will work best. I have not tested the recipe with other alternatives such as tapioca flour or cassava flour.
  • Instead of coconut oil, you could use olive oil, melted grass fed butter, or melted ghee.
  • Cookies can be stored in an airtight container for one week or in the freezer for four weeks.
